For this evaluation, the coffee was tasted in espresso at 93 °, with an extraction of 25 ml in 26 seconds. The average degassing of the coffees took place in 60 hours. The cup features hazelnut cream and light reddish-greyish shades. On the olfactory examination, there are notes of vanilla and toasted hazelnut. The taste is pleasantly acidic (due to the high percentage of washed coffees present in the blend), but the body is much more sensitive than one might imagine. The aftertaste in the cup is very fine.
