The Chemex uses a thicker paper filter that removes more oils and sediment, producing an incredibly smooth and sweet cup. Its elegant glass design doubles as a serving carafe.
Equipment Needed
- Chemex brewer (6- or 8-cup)
- Chemex bonded filters
- Gooseneck kettle
- Scale with timer
- Coffee grinder
Step-by-Step Instructions
Heat water
Bring water to 93–96 °C (200–205 °F).
Rinse the filter
Open the Chemex filter so that three layers face the spout. Rinse thoroughly and discard the water.
Add coffee
Add 30 g of medium-coarse ground coffee to the filter. Shake gently to level the bed.
Bloom
Pour 60 g of water over the grounds in a slow spiral. Wait 45 seconds for the bloom to develop fully.
Main pour
Pour in slow, steady circles, keeping the water level about 2 cm below the rim. Target 500 g total water.
Final draw down
Allow all water to drain through. Total brew time should be 4:00–4:30. Remove the filter and serve.
Pro Tips
- The thick Chemex filter is key to its clean taste — don't substitute with thinner filters.
- Pre-wetting the filter is crucial; dry Chemex filters impart a noticeable papery flavor.
- If brewing for guests, the Chemex doubles beautifully as a serving vessel.
