Mission: Really good coffee!

There can be worlds between drinking coffee and enjoying coffee. With really well-roasted beans, good coffee in your cup is no longer rocket science. With our hand-roasted coffees, discover the enormous wealth of coffee beans beyond sour and bitter. If you are curious: come with us on a journey through the fascinating world of coffee.

From Bremen coffee craft tradition

Really good coffee is our passion. That's why we're roasting again as we did before when there were almost 200 small coffee roasters in Bremen. Slowly, controlled by hand. In a temperature range that allows the coffee beans to roast through. All coffee beans are allowed to brown evenly. Because only then can the enormous variety of its flavors develop fully.

CraftCoffee meets CraftBeer!

The name of our handicraft roastery almost came about by itself: UNION RÖSTEREI. Our friends from the Bremer Union Brewery have made space on the floor under the roof of the old brewery building in Walle. This is where we roast our coffee. High up under the old Union lettering. A winch is now pulling green coffee sacks into the old malt store.

REALLY GOOD COFFEE STARTS IN THE MIND

Coffee in 360 °

The concentrated experience and iron will of a roast master, a barista, and an expert in fully automatic coffee machines and portafilter machines set off on the long journey to really good coffee: for every roast, we sharpen our senses anew: smell, taste, see. We patiently taste roast sample after roast sample. Mix by mix. Pouring by hand, run by machines. To discuss. Debate. Until we are really satisfied.

It is in the hands of the master roaster how the coffee comes out in your cup. As sweet as chocolate that melts on your tongue. Sparkling like a punch. Light like summer wine, or deep and dark like an old Bordeaux. Only a really well-controlled roasting process brings life to the coffee bean. It shapes its character and gives it its very own signature. You will taste all of this in your cup!

From the idea to the enjoyment

The unmistakable character of Union Kaffee Blends always takes shape first in our imagination. With taste ideas on the tongue, we look for suitable green coffees, roasting times, and mixing ratios.

It is a long way

Forty types of green coffee from the world's coffee regions were at the beginning of our selection process. Even before the first trial roast, ten were ruled out because of their “green bean appearance”. We roasted and tasted the remaining samples on our trial roaster, which we call “Murdock”.

The goal is the benchmark

After four sessions we had ten candidates. We poured the first liquid blends together. If we liked a blend, we also tested it with milk and sugar. But only to discard it again immediately. What felt like 123 laps later, with lane changes, pit stops, and tire changes, we saw the light at the end of the tunnel.

It remains exciting until the end

Hand-controlled long-term roasting is a tricky business. The process has to be checked again and again with great concentration with eyes, nose, ears, and tremendous experience. So as not to miss the right moment when the beans have developed their optimal aroma. In the end, a few seconds decide whether 18 kilos of coffee go into the bag or the can.
