With complex tasting notes of honeycomb, sugar cane and earl grey tea, this coffee is reflective of it's unique drying process. Hand picked with superior attention to detail, the growers use the latest of innovations to bring out the best in the beans.
Gold Mountain Coffee Growers is a direct trade farming group that connects farmers of high-cupping specialty coffee directly with coffee roasters. Their flagship coffee farm (Finca Idealista) is in Nicaragua. With a team of 80 growers, they remove imperfections on raised drying beds on conveyor belts by hand. For honey process the beans are dried with the sweet, naturally-occuring honey-like layer outside each bean, some of which penetrates the bean, giving it a taste similar to honey. To prevent fermentation, the honey processed coffee is rotated every 12 minutes at first until it dries in the sun.
