THE PERCOLATOR PRINCIPLE
The Moka Express works according to the percolator principle (percolare, Latin: to filter) and was the first coffee machine of this kind. Water rises through a metal tube into the upper half and hits the ground coffee. The hot water thoroughly penetrates the ground coffee and dissolves the aromatic substances. This infusion drips back down and the process repeats itself. As soon as the coffee has reached the desired strength, this circulating process is stopped by removing the pot from the stove.
