GUATEMALA Antigua Pastores
Guatemala Antigua is a fine coffee also for the particular care with which it is harvested and subsequently processed. This coffee comes from the magnificent region of Antigua, in the midst of volcanoes, and enjoys the perfect climate and very nutrient-rich volcanic soil. Cultivation at high altitudes allows the production of a coffee with exceptional vivacity, full-body, spicy aroma, and perfectly balanced acidity.
NOTES ON GREEN
This coffee has an average of 18-19 sieves and the defect rating ranges from very low to zero. If toasted as an espresso (action 50-55, Italian) the result is a cream of a light hazelnut color with reddish nuances at times very marked. Among the aromas, you can perceive traces of flowers, grass, and, often, vanilla.
On the palate, a coffee stands out with a pleasant sweet note, with a round and fine acidity. If toasted by filter and brewing (action 65-70, full city) the acidity remains sensitive, but the coffee does not lose sweetness, making the floral notes more elegant.
