MOKA EXPRESS

THE PERCOLATOR PRINCIPLE

The Moka Express was the first coffee machine to use the percolator principle (the word comes from the Latin verb percolare, which means filter). With this principle, water rises through a metal tube or cylinder and hits the ground coffee. The water is pushed upwards by the pressure of the water vapor, then penetrates the ground coffee and thus releases the aromas from the ground coffee. The resulting liquid drips back down and rises up again through the metal tube. This circulating process is stopped as soon as the coffee has reached the desired strength.
