Three ingredients, a few minutes, and a craving for a dessert: that's all it takes to learn how to make water-based coffee creamer, a mouthwatering treat that can be added to espresso to make it even tastier or served as a cold creamer, especially in summer.

This recipe represents a less caloric and lighter version of the much-loved coffee bar creamer, also known as "Grandpa's Coffee." With no cream, milk, or eggs-it's hard to find an equally delicious preparation with so few calories! This cold mousse is also perfect for those who prefer vegan and gluten-free recipes.

Water coffee cream: ingredients for 6 to 8 people

  • 200 ml of very cold water.
  • 140 g of white or brown sugar.
  • 50 g of instant coffee.

Water-based coffee creamer: preparation

Combine the instant coffee and sugar in a tall container.

Pour in the nearly frozen water and whip with an electric whip for a few minutes until the cream is thick and velvety.

When the chilled mousse is ready, pour it into small glass glasses to create single servings. You can decorate with coffee beans and a sprinkling of bitter cocoa powder.

You can now enjoy the water coffee cream by serving it immediately or freezing it.

Tips and storage for cold water mousse

The water must be very cold, so we recommend that you keep it in the freezer for at least 15 minutes before using it in the preparation of the cream.

It is preferable not to use coffee prepared with a mocha or espresso machine but the instant version because, otherwise, you will not be able to achieve the same result.

If you plan to serve or enjoy the water coffee mousse after dinner or otherwise just before bedtime, we recommend using decaffeinated.

You can store the cold cream in the freezer for a few days; the consistency should remain almost unchanged. In the refrigerator, however, it loses its creaminess.
