Coffee walnut cake recipe

It's cold and inclement outside and nothing beats a cup of coffee or hot chocolate and a piece of homemade cake. Just warm up after a long bike ride, a walk with the dog or after a day of work in the open air. Do you feel like making the most beautiful creations nice and warm inside? The oven does the rest! And the party is complete when the house fills with the wonderful scent. Because then you know; you can almost enjoy something delicious!

This coffee-walnut cake is not only a feast for the stomach, but also for the eye. And don't let the coffee put you off too much, because even if you don't like coffee, this cake is worth a try.

Bittersweet

Cakes are often very sweet, coffee is a bit bitter. A strong cup of coffee therefore offers a good counterbalance to a cake with sweets. In general, we therefore like to drink a cup of coffee when we enjoy a piece of cake. Not entirely surprising that coffee is a tasty ingredient in a cake recipe. Black coffee works best for this. The milk in a cappuccino, for example, detracts from the bitterness, which we would like to incorporate into the cake.

Shopping list

• 400 grams of butter 

• 225 grams of light brown caster sugar 

• 4 eggs 

• 225 grams of self-raising flour 

• 60 grams of chopped walnuts 

• 90 ml of strong, cooled coffee 

• 350 grams of icing sugar 

• Pinch of salt 

• Caramel sauce to taste

Method of preparation

Beat 225 grams of butter with the caster sugar with a mixer until pale and airy. Add the eggs one at a time while continuing to mix. Sift the flour with the salt into a bowl. Then stir this into the butter mixture. Finally, add the walnut pieces and 60 ml of the coffee and stir until all ingredients are well incorporated. 

Then divide the mixture over the baking tin(s). The fastest way is to bake the cake in two identical cake tins. These should be greased in advance and lined with baking paper. Bake the two cakes for 20 to 25 minutes in a preheated oven at 180 degrees. When you bake the cake in one form, keep the baking time of 45 to 50 minutes. Afterwards you can cut this cake horizontally into two or three layers. Check from time to time whether the cake is ready by pricking it with a skewer. The cake is done when the skewer comes out clean and dry.

For the cream, stir together the remaining butter, coffee and icing sugar. Add a tablespoon of milk if necessary to loosen the cream. Spread the cream between the layers of cake. When your cake has three layers, first divide the cream into two portions. Finish the cake with a layer of caramel sauce on top and possibly some extra walnuts.
