Coffee sauce: how to prepare and use it

Tasty, refined, certainly classy: this is coffee sauce. Not easy to match, but very simple to make. With our tips and tricks, you can do a great job. Coffee goes well with meat and fish: we will see how to employ it.

2 basic coffee sauce recipes

To prepare coffee sauce, we offer you two basic recipes: the first involves the use of cream, and the second is designed for those who do not like to use this thickener in cooking.

Coffee sauce with cream

  • 2 cups of unrefined coffee (you could use the firm, creamy coffee from Intenso capsules in this recipe).
  • 50 ml cooking cream.
  • 1 teaspoon sugar.
  • A pinch of salt.

In a nonstick saucepan pour the two cups of coffee and set over a low heat. Incorporate the cooking cream (salted cream, of course), a teaspoon of sugar, and a pinch of salt. Stir and reduce until you get a cream of the right desired consistency.

Coffee sauce without cream

  • 3 cups of unrestricted coffee (for this recipe, we recommend Samba full-bodied, velvety coffee).
  • 15 g sifted 00 flour.
  • 1 knob of butter.
  • 1 teaspoon of sugar.
  • A pinch of salt.

In a nonstick saucepan pour the three cups of coffee, add the knob of butter and put on a low heat. Incorporate a teaspoon of sugar and a pinch of salt, let it mix.

Add 15 g of sifted 00 flour a little at a time and while stirring, let it mix until you get the desired consistency, without lumps of course. If by evaporation of the coffee the sauce becomes too thick you can adjust by adding a little more coffee.

You can flavor both coffee sauces with onions, which should be browned before pouring in the coffee. And at the end of preparation, sprinkle with small amounts of thyme or a sprig of rosemary.

How to use coffee sauce

The recipes we have suggested are simple and are considered basic recipes. The pairings that follow are also a starting point. 

Let's start step by step. The velvety sauces just described can be paired with:

  1. Filet.
  2. Steak.
  3. Roast.
  4. Sliced.
  5. Fillets of sea bass.
  6. Salmon slices.

Directly into the dishes, pour the right amount of coffee sauce into one half, taking care of the presentation of the dish. Lay the meat or fish in the other half. "Just the right amount" refers to that amount sufficient to season the portion of the second course.
