Calypso Coffee Recipe

Calypso coffee is not widely known, but it is great. It's made with rum, coffee liqueur, coffee, and pouring cream stacked on top, and it looks a lot like an Irish coffee. It is often created with crème liqueurs such as crème de cacao - it is crucial to note that they are made with more sugar and have a thicker consistency but do not contain cream, unlike Irish cream. As a result, the colour of the coffee should remain dark, with the cream producing a distinct and dramatic layer.

Ingredients
150ml strong hot filtered coffee
30ml coffee liqueur
30ml rum
10ml (optional) simple syrup (or 1 tsp soft brown sugar)
30ml thick pouring cream
2 coffee beans, to garnish

Preparation

STEP 1 

Fill a cup or tumbler halfway with hot, filtered coffee. If using, add coffee liqueur, rum, and simple syrup (or sugar and mix until dissolved).

STEP 2 

Carefully decant the cream onto the surface of the drink with the back of a spoon. Garnish with two coffee beans or a chocolate grating.
