Caffelab EL SALVADOR Volcano

A unique batch of coffee was created by the Pacas family by selecting the best botanical varieties from their coffee plantations located on the heights of the Apaneca-Ilamatepec mountain range, in the western part of El Salvador.

All the Bourbon, Pacas, and Pacamara variety drupes are harvested with selective picking and, before being spread on the patios for drying, undergo a further selection to eliminate any possible defects. 

For the first two days, the coffee is spread on the patios in a very thin layer in order to speed up the drying of the fruits, preventing the risks of fermentation.

From the third day, on the other hand, the layer of coffee is left thicker to ensure slower and more homogeneous drying of the fruits, which are moved 5 to 8 times a day, every day. At night the coffee is grouped in small quantities and covered with jute bales to protect it from humidity and rain.

The Pacas family is involved in many projects related to the environmental and economic sustainability of coffee production and this lot is certified by the International Women Coffee Alliance.

In the cup, this coffee shows intense aromas of peach, aromatic herbs, and pomegranate. A good body, a fine and balanced acidity, and a good sweetness give a pleasant and persistent aftertaste.

When tested according to the SCA protocol, this coffee obtained 87 points
