Prestigious Arabica bequeathed by the Mayan Indians of the Altiplano in Guatemala, the Maya Ixil is grown at altitude on very small plantations. Planters use compost made from fruit pulp and manure and weed by hand. No chemical fertilizers and no pesticides are used. Despite this, they achieve very good productivity. Within the democratically organized committees, the members themselves decide on the future of their cooperative. The Fairtrade premiums made it possible to effectively combat coffee rust, which had destroyed a large part of the harvest.
