Brandywine - Las Lajas Black Honey
The Las Lajas micro mill in Costa Rica has something of a cult following among the Fellow team. Producers Oscar and Francisca Chacon have reinvented classic processing methods and black honey is their longest and most labor-intensive process. The result is a stunningly balanced cup of tart and sweetness. We tasted apple pie and cherry cider.
