Welcome to the world of cleanliness and purity. Like that of the sea jellies, these coffee seeds were soaked in an ocean of water. During the coffees’ short swim, fermentation, acting as wisdom, drives acidity, clarity, and focus throughout each tentacle of possibility.
Being the largest farm owned by the Pacas Family, this beautiful piece of land is home to many different cultivars and the perfect place for Federico to experiment with new varieties. Their family discovered the Pacas variety, a natural mutation of Bourbon, over 70 years ago and has continued to grow this sturdy, high yielding plant on many of their farms. We've found this coffee to have a classic Salvadoran profile, with a sweet, nuttiness in the cup with a touch of tea and citrus coming through as it cools.
