Chelazos refers to the people who live in Chalatenango, a northern district of El Salvador bordering with Honduras. It has been designated as a biosphere reserve since 2011, allowing the rich biodiversity of the area to be protected. Coffee grown in this region is typically blended from two main areas, Citalá and La Palma. We were lucky enough to snag some coffee from this producer, Abel Recinos, before it was blended.
